The numbers by climate

These are working targets for a full-size colony going into winter, counting capped honey in the hive:

  • Cold north, long winters (roughly zones 3 to 5): 80 to 90+ pounds. Five to six months with little or no forage and no flying weather.
  • Middle climates (roughly zones 6 to 7): 50 to 60 pounds. Real winter, but shorter, with occasional flight days.
  • South and mild coasts (roughly zones 8+): 30 to 40 pounds. Bees fly and even forage in winter, but a nectar dearth can still starve a light colony.

Two adjustments worth making. Big prolific stocks like Italians eat more than frugal ones like Russians and Carniolans. And a colony that goes in strong needs more total fuel but survives better than a weak one with the same stores per bee. Do not equalize a strong hive down to save honey.

What a frame holds

Store math is frame math. A fully capped deep frame holds about 8 pounds of honey. A full medium holds 5 to 6, and a shallow about 4. So the northern target of 90 pounds is roughly a full deep of honey plus several more frames, or a deep brood box with honey shoulders plus a full medium super. Count both sides, count only what is capped, and be honest about half-filled frames.

Placement matters as much as total. The cluster moves up through winter, not sideways, so stores above the brood nest are worth more than stores two frames away. A common late-winter tragedy is a starved cluster inches from full frames it was too cold to reach.

Hefting: the beekeeper's scale

Once you know what a heavy hive feels like, you can check stores in five seconds without opening anything. Lift the back of the hive an inch with two fingers. If it comes up easily, it is light. If it feels nailed down, it is heavy. Heft every hive in fall while you still know the truth from your inspections, and you will carry that calibration through winter checks when opening the hive is not an option.

The fall feeding window

If stores are short, the fix is 2:1 sugar syrup (two parts sugar to one part water by weight), fed early and hard. The bees need time to take the syrup, dry it down and cap it, and that work ends when daytime temperatures stop reaching about 50°F (10°C). After that, syrup sits uncured in the comb or simply is not taken at all.

When it is too cold for syrup

A light hive in November is not lost. Switch to dry emergency feed placed directly above the cluster, where rising warmth lets the bees reach it: fondant, homemade sugar bricks, or the mountain camp method (dry granulated sugar poured on newspaper laid across the top bars). None of it is as good as capped stores, and all of it beats starvation. Check and replenish on mild days without breaking the cluster.

Leave honey or feed syrup?

The cheapest winter feed is the honey you do not harvest. Honey carries micronutrients syrup lacks, it is already capped in the right place, and leaving a super costs you nothing but revenue. Colonies do overwinter fine on cured fall syrup, and commercial outfits prove it every year, so this is a judgment call, not a moral one. One more winter killer: moisture

Stores are the fuel, but condensation is the assassin. A cluster can survive deep cold and still die wet when warm moist air hits a cold inner cover and rains back down. Whatever your stores plan, pair it with ventilation or a moisture quilt appropriate to your climate. Full winterizing is its own topic, but no stores target saves a soaked cluster.
